Kosher food is renowned for its distinction between meat and dairy, but a middle ground does exist: pareve, food that contains neither dairy nor meat products. Kosher pareve recipes are primarily vegetable, fish or grain based, and often highlight creative meat and dairy substitutes, such as margarine masquerading as butter, tofu taking the place of meat, and soy products sitting in for dairy staples.
