Vanilla Chip Maple Pecan Cookies

This is a fabulous cookie! It looks pretty and tastes like a maple glazed doughnut. Yum!

Ingredients

1 cup vegetable shortening
1/2 cup margarine
2 cups brown sugar, packed
2 large eggs
1 teaspoon vanilla
1 teaspoon maple flavouring
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
2 cups white chocolate chips
1/2 cup pecans -- chopped



Frosting
1/4 cup margarine
4 cups confectioner's sugar
1 teaspoon maple flavouring
3 tablespoons non-dairy coffee creamer or soya milk
72 pecans -- whole

Directions

Preheat oven to 350 F.Cream shortening, margarine, and brown sugar. Add eggs. Beat in flavourings. Add dry ingredients and mix. Stir in chips and pecans. Drop by tablespoonfuls, two inches apart, onto parchment lined baking sheet. Bake at 350 F. for 8-10 minutes, until golden.


 


Frosting:


Cream margarine and confectioner's sugar. Beat in flavoring and enough creamer to get spreading consistency. Frost baked cookies. Top each cookie with pecan half.
