Spicy Apricot Cake

Here's one of my favourite ways to use apricots during the summer months.

Ingredients

3          cups flour


1 1/2    cups sugar


1/2       cup (1 stick) margarine (trans fat free)


1/2       cup oil


1          tsp vanilla sugar


1          Tbsp baking powder


2          tsp cinnamon


1          tsp ground ginger


1/2       tsp ground cardamom


1/8       tsp ground allspice (optional)


1/2       cup orange juice


1/2       cup oil


3          eggs


8          apricots, halved and pitted (approximately)

Directions

1.  Preheat oven to 350 degrees


 


2.  In the bowl of an electric mixer, combine all the ingredients until the orange juice.  A crumbly mixture should form.  Remove one generous cup of crumbs and set aside. 


 


3.  Add remaining ingredients, and mix.  Pour onto a 9 x 13 greased baking pan, press the apricot halves in an even row, about 1/2 inch apart, with the round part on top.  Sprinkle evenly with reserved crumbs and bake for 55 minutes to one hour.  Let cool completely before serving.
