Passover Wacky Franks
Difficulty Level: Easy
Preparation Time: 1 hour 15 minutes
Cooking Time: 50 minutes
Servings: 12
Hot dog and bun, all baked in one! These batter-coated hot dogs are terrific for children of all ages. They’re ideal for a mid-week meal when you just can’t look at another piece of brisket or chicken.

From The NEW Food Processor Bible by Norene Gilletz (Whitecap)

Ingredients

1/2 cup oil

1 cup water

2 cups matzo meal or cake meal

1 Tbsp sugar

1/2 to 1 tsp salt (to taste)

4 eggs

12 hot dogs, frozen (beef, chicken or veal)

12 wooden skewers

Directions

Preheat oven to 375°F. Line a baking sheet with aluminum foil and
spray with nonstick spray.

Combine oil and water in a saucepan and bring to a boil. Add matzo
meal or cake meal, sugar and salt and mix well, until mixture pulls
away from the sides of the pan. Transfer mixture into processor bowl.
Steel Blade: Process mixture for 5 seconds. Add eggs one at a time
through the feed tube while the machine is running. Process 30 to 40
seconds longer, until smooth.

Mold mixture around frozen hot dogs, oiling your hands slightly for
easier handling. Arrange in a single layer on foil-lined baking sheet.

Bake uncovered for 50 minutes. Remove from oven and insert wooden skewers.

These keep for 2 days in the refrigerator.
Reheats and/or freezes well.
