Blondies
Difficulty Level: Easy
Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Servings: 32 bars
“Company’s coming, the house is a wreck – but if I had some fresh baked goods to offer, I may be able to pretend I’ve got things under control.”
Have you ever felt that way (can you tell I have???).
These blondies are the perfect answer. They are really quick to whip up, adaptable to the flavors of your liking and quite good as well!
What I did instead of mixing in the add-ins, I divided my pan in thirds and topped each third differently. The platter looked fabulous and everyone had something that they liked.

Ingredients

1 stick butter or margarine, melted

1 cup brown sugar

1 egg

1 teaspoon vanilla extract

Pinch of salt

1 cup flour

Optional add-in's: 1 cup nuts or 1 cup chocolate (or other flavored) chips or 2 Tablespoons espresso powder or 1/2 cup craisins etc…

Directions

1.  Preheat oven to 350.  Grease and line a 8x8 baking pan.

2.  Mix melted butter with brown sugar until smooth.   Beat in egg and vanilla.  Add flour and salt and mix in your choice of add-ins.

3.  Pour into prepared pan and bake for 20 – 25 minutes.  Don’t over bake; they are better chewy than dry.

4.  Let cool and cut into 1” x 2” bars.

This looks good, how much is a 'stick' of butter, and is the flour plain or self raising, Thank you,

1 stick of butter or margarine is equivalent to 1/2 cup or 8 Tablespoons. The flour I used was regular all purpose flour. I hope you will give these a try.
