I too envy the stamina. Do u know if quinoa is a carb? I find it really fills me.

Dina Cohen

Posted On Jan. 02, 2012
Quinoa is a seed that provides plenty of carbohydrate, but it is a good source of fiber and unusually rich in protein. These factors cause it to be more slowly digested, giving you sustained energy and enabling you to feel full for longer.

OMIGOSH i love this idea! I will try this soon! What else can i use if i dont have a "silpat"? Can i just grease a pyrex? I dont think parchment paper would work well cuz its so liquidy - right? Can't wait to try this. I've dehydrated individual fruits like this (like mango) and it's so yum. Thanks for the idea!

Thefruitlady

Posted On Feb. 04, 2012
Thanks so much for your inquiries. Smartypants: I think that greasing any pan would ruin the texture of the fruit leather by adding in an oily component. I would venture to guess that doubling baking paper (not wax paper, as that might melt) would solve your problem of not having a silpat. Maybe using a nonstick cookie sheet would do the trick?

Is it supposed to say 1/2 inch thick? 1 1/2 inches seems awfully thick. Please post a correction if need be. Thank you

Thefruitlady

Posted On Feb. 04, 2012
Mrs. D.: You are correct. There was an error. The correct thickness is a little under 1/2 and inch. And might I add another idea for fruits to mix. Bananas add a lot of texture and taste to fruit roll ups. Try them with your berries, mangoes and kiwis.

Thank you Nanette, I'm glad you enjoyed. Rachelr - the margarine in the cinnamon smear could definitely be replaced with oil. I have not tried it for the dough, It would most likely give a crispier cookie. With the margarine, these stayed soft for quite a while.

If a child is severly allergic to sesame, what is a good substitute for sesame oil in recipes?

Hindy Bertram

Posted On May. 03, 2012
Typically, you can exchange most oils in a recipe with any other oil (measurement for measurement). If you're specifically using it for the flavor, a nut oil, such as walnut or peanut oil is your best bet -- so long as there isn't a nut allergy, too. After nut oil, I'd recommend olive oil. Though the flavor profile will change a bit more, it can't be beat for health benefits. What's also important to keep in mind is that different oils have different burning points, so keep an eye when you substitute to make sure your food isn't burning -- or cooking so slowly that your food is turning soggy. Good luck!

i also find zucchini is a milder vegetable than others, like you pointed out the way you substituted eggplant with it, but i still have a hard time convincing my kids that its mild and that they should try it. They don't want to hear of vegetables other than the occasional cucumber and carrot. Got any good ideas/recipes to convince them with?

Thefruitlady

Ostrich eggs the size of, well, ostrich eggs. Something to really see. An omelet to feed twenty!

Thefruitlady

Posted On May. 17, 2012
If you slice the zucchini super thin, maybe with a mandolin, then when you fry it, the results will be like crunchy pasta, lasagna-ish. (I know, that is not a word, humor me.) Alternatively, Make the parmagiana using lasagna noodles in place of the zucchini strips, but grate zucchini really fine and mix it with the sauce. Mamaruchell- Getting kids to eat veggies isn't always easy. And I don't know if this recipe will convince them. I know that my kids don't eat it. I made a 9 by 13 pan to share with my neighbors who all said "YUM, but my kids won't eat it and I will have to eat the entire pan myself!" You can do it with cooked mashed carrots too. Try a little at a time. They probably won't notice it and you get veggies in them. Then you can tell them when they grow up one day and they will thank you for the extra color on their cheeks. Alternatively you can pay them to eat vegetables! A dollar a pepper? (I AM JUST KIDDING!!!!)

Hi, I had no idea my posts would be generating questions..... I am up in the Catskills mountains where my Internet is quite spotty and shared by many family members, so I have not been as on top of my mail as i should have been. Sorry for the delayed response... But here goes .... I blend hazelnut, French vanilla, and regular, and I keep them in a few jars in my freezer. However when in a pinch I use hazelnut or if I can, I mix it with vanilla. I definitely use flavored coffee in my glaze. Nesquick Rolo is pareve, at least in Canada it is.

In May 2011, my husband passed out on the floor of our garage. Just before giving him CPR he came to and we rushed him to the hospital. Six more heart attacks in a twenty minute period later revealed that he has a genetic disorder called Brugada syndrome. There is an electric defect that causes a heart attack if a person is sleep deprived and dehydrated. He was experiencing both. Often young athletes die on the field because of the same issue. Baruch HaShem it wasn't his time. He has a defibulator and we now have had our sons tested for the same defect. Unfortunatley, there are only 100,000 living cases of this disorder in the world. Identifying the genetic markers is limited to a very small pool. Our pediatrician recommended that we use coconut water over the sports drinks. The boys love it. It is best chilled. Trader Joes sells it ineexpensively and we also get it by the case from Amazon. It is refreshing and with HaShem's help I keep my family going through their active lives with coconut water!

Hi Estee, I also bought an ice cream maker this summer. I have two books to recommend: The perfect scoop by David Lebovitz and Artisan gelato. Both are amazing and will take your ice cream/gelato/sorbet making to the next level. I found that the best ice creams are made from a custard base. Now is a great time of the year to make sorbet because of all the fruit that is so readily available. Hatslocha rabba. Nanette Stoll

rochel i made the coffee cake using all hazelnut. wow was it delicious everyone loved it and was wondering what that special taste was. when you blend the hazelnut vanilla and regular what regular do you use house blend or colombian and do you do 1/3 of each. thanks again for the special recipe and for sharing it with us.

Hi Leah, sorry for the delay, I have been traveling since Yom Tov, and the disadvantage of being Canadian is that my Internet does not come with me. However, back to your question, when I blend my coffee I use one regular, non Colombian coffee, one vanilla and two hazelnut. I do a lot at a time and keep it in my fridge. It is now the only instant coffee I can drink. Just a small tip, should you want to use it as a daily coffee and you don't want a hastle. I put a teaspoon of the mix with my desired sugar in a cup with a drop of boiled water to dissolve . I then fill the rest of the cup with milk and microwave it until it is hot. Heaven ! Try it and you will never want a water based coffee again!

rochel thanks for answering my question the recipe calls for 1/4 cup of flavored coffee so I assume that 1 reg 1 french vanilla and 2 hazelnut equal the 1/4 cup also when you say one are you referring to the individual cylinder packages of coffee or are you saying 1 tsp of each. thanks

Leah

Posted On Nov. 14, 2012
hi rochel its me again. i made the cake using all three flavored coffees and it was wonderful . everyone loved it. In order to get 1/4 cup of flavored coffee I had to use 2 house blend, 2 vanilla, and 4 hazelnut for a total of 8 cylinder of coffee whichi is approximately 8 tsps of coffee-does this sound right hope I was not using too much coffee. thanks again for your time i just want to get the ingredients perfect because it is now my favorite cake. also you did not give us the recipe for the chocolate glaze

well...everyone wants traditional for our chanukah party but i'm feeling adventurous. so i guess i'll compromise and do latke variations-either the crispy cheese or the vegetable ones (depending how late everyones shabbos meals go...:) ) and not gonna lie-the roasted garlic potato soup everyone keeps mentioning sounds incredible. might just have to add that to the menu!

You can actually make a healthy cheese cake out of low fat cottage cheese, use splenda (or other artificial sweetener), and cut down more on fat by substituting one whole egg with 2 whites. When you blend ingredients it removes all the lumps of the cottage cheese and you are left with a creamy texture.

At our seders, I'm in charge of the lettuce and the celery (and more). Before Yom Tov, I weigh the lettuce to make sure each one gets a kaziyit; then I bag them. Celery, I weigh (to make sure it's NOT a kaziyit) and bag that too. I would be so happy to have this pillow case for the Seder (actually, a set would be nice too!). Love Esther O's site!!!

I also use small chinese tea cups for the salt water for each.I have stand by paper bowls for those who want the salt water with their eggs,. Much cleaner and faster.

I have young children, and a food processor is one of those luxuries that is practically a necessity anymore. I would be thrilled to win my first processor from Kosher Scoop! We are having 16 over for Pesach this year, and having recently developed autoimmune arthritis I am starting to feel very anxious about my usual prepping routines. I am giving myself much longer than usual this year to chop, save my energy and be safe G-d willing. It's a year of change for us. :-)

This would be such a wonderful blessing to receive especially since I homeschool all of our kiddos and do a lot of cooking for Home Ec with the kiddos. I already follow you on FB, Twitter and Pinterest and use your site each day for ideas and recipes with the kiddos-they each pick a recipe out for their dinner item they will be serving the family each night--it's one of my favourite things we do as a family :) Thank you and blessings :)

I love making my chocolate crinkle cookies. All it needs is a food processor, chocolate chips, nuts, sugar and egg whites! I love your website!

when my family got a food processor for pesach, it changed erev pesach - no more sitting with a grater and attempting to grate the marror by hand! (although it is a lot stronger now...)

Liked on Facebook. The thing that my food processor makes the most on Pesach is potato kugel. At least 30 lbs

I've been working on getting my family to eat more fresh vegetables and salads. The food processor would really cut down my prep time.

My family's favorite holiday food that I make in a food processor is my grandmother's homemade gefilte fish. have adapted the recipe to use in a processor and use it in my mother's processor as I do not own one. I make the dish at least three times a year (Passover, New Year's, and my husband's birthday dinner). It would make life so much simpler to have a food processor at my house than have to schlep the hour to my mother's home to use hers. Chag sameach all.

I found that adding a little baking soda to the soaking water of the chick peas yields smooth chummus without having to bother to peel all those chick peas.
