1/4 red onion, finely diced
2 avocados, diced
6 oz. colourful (heirloom) tomatoes, diced, (approximately 2 tomatoes)
zest of half a lime
juice of half a lime
1 Tbsp extra virgin olive oil
¼ tsp. kosher salt
freshly ground black pepper to taste
Combine all the ingredients in your serving dish and mix. Serve immediately with toasted pita chips.
Note: Dairy option – add a dollop of sour cream. It's delicious!!
