1/2 cup vinegar
1/2 cup sugar
1/2 cup mayo
1/2 tsp salt
2 tsp fresh dill (or 2 Eden dill cubes)
8 kirbies - peeled and sliced
1/2 med red onion - cut into half moons
4 scallions sliced
Prepare dressing together and pour over veggies. Combine well and serve. Salad may be prepared a day in advance.
