- zucchini - 3 medium
- olive oil - 1 tbsp
- salt - to taste
- garlic-herb low fat cream cheese - 1/2 cup
Slice zucchini in ¼ inch thick slices lengthwise. Discard the two outer slices that are mainly skin.
Brush the slices with olive oil on both sides and lightly sprinkle with salt. Preheat a grill pan or a non-stick pan and place zucchini in pan .Grill each side for about 3-4 minutes or until zucchini is tender. Allow completely to cool. Once cooled, spread ½ Tbsp of cream cheese over zucchini and roll the slice. Secure with a toothpick. Refrigerate if not served immediately.
