Bananas and peanut butter have been a longtime favourite combo of mine. Here's a great way to combine the two into a refreshing, make-ahead treat.
- chocolate chips - 1/2 cup (peanut butter or caramel flavoured, I use Bakers Choice brand)
- bananas - 3, cut into 2-inch pieces
- ground filberts or flaked coconut - 1/2 cup
In a double boiler or a bowl set over a pot of hot water, melt the chips until soft.
Stick a skewer into each banana and dip the end into the melted chocolate. Dip into the filberts or coconut and place on lined baking sheet or plate. Place in the freezer and freeze for 3 hours. Transfer to a ziplock bag and store for up to 2 months.
