Although she was always busy with her community and job, my mother a"h always made the time for special foods she knew her family would enjoy. A friend of hers recently remarked that she was so amazed that my mother made the time for this recipe, as it calls for constant stirring! Stirring aside, the recipe is easy, and the taste always brings back memories of Shabbos and Yom Tov meals with my family and especially my mother.
- 14-oz box risotto (arborio rice) - 1
- chicken broth (we use from a can) - 4 cups
- onions, white or red - 2
- peppers, assorted colors (not green) - 3
- spices to taste (onion powder, garlic powder, and any other spices) -
