The smell of gingerbread preceded me as I walked up to the pathway to the newly opened Ellen Jane Desserts. After years of baking beautiful pastries, desserts and miniatures, Ellen Jane finally put up her shingle, after years of training at George Brown college. Baking had always been a long time passion and the great feedback and enthusiastic response to her homemade masterpieces made Ellen decide to go back to school and make her passion into a business. “Making beautiful and original creations gives me great satisfaction, and while it’s so important for the cake to look beautiful, it, of course, has to taste great as well. We therefore use only the finest kosher ingredients available, ensuring that even though our cakes are dairy free, they are truly delectable.”
Ellen then proceeded to show me some of the cakes that she had been working on. Her kitchen has already been kosher for Passover for quite some time, and she is working steadily to fill the orders she has received thus far. The amazing aroma coming from the oven was teasing me, so I inquired about the smell. Ellen pulled out a baking sheet covered with crumbs that were baking. “This is the base of the lemon tart that we have been working on.” I cannot believe that there is no flour in those crumbs. They look incredible!
Actually, says Ellen, baking for Passover has been challenging but also a lot of fun. The process of creating moist and delectable treats without any flour, and being limited to using specialized ingredients, has been a great challenge, and she has had fun coming up with some fantastic recipes that she is really proud of. “My chocolate hazelnut layer tort is out of this world, and the Clementine cake with candied oranges, the French apple tarts, cookie, and the deeply decadent brownies, are just a few examples of some of the delicious dairy-free desserts we offer here.”
I asked Ellen for her number one baking tip for our readers. She suggests tasting what you are making to ensure those even, balanced flavors, and that practice and a splash of instinct are always helpful.
