Just like anything else, foods can shine and fade in popularity, many times becoming a fad. I don’t think most Americans knew what sushi was 10 years ago, and most of us in the western hemisphere didn’t know what to do with kale even 5 years ago. Quinoa is one of those foods that has entered American menus more recently, though in no way is it a new food. In fact, they call quinoa an ancient grain and a superfood…just goes to show what good marketing can do! But I do believe that the food has to be worthy of its popularity, or it will fade into oblivion in the way of most fads. Quinoa is not going anywhere. It’s here to stay, and I’m sure glad it is.
