These cookies have evolved over time in our house. It started as a regular biscotti and somehow morphed into our "diet" version. Enjoy!
- flour - 3 1/2 cups
- sugar - 3/4 cup
- splenda - 3/4 cup
- egg whites - 5
- vanilla extract - 4 tsp
- baking powder - 2 tsp
- oil - 6 tbsp
- salt - pinch
- lemon zest - 3 tbsp, freshly grated
- dried cranberries - 1 cup
Mix all ingredients together.
Place on cookie sheet in 3 logs.
Bake at 350 degrees F for approx. 30 minutes.
Turn off oven. Slice Biscotti and return them to oven (off) to harden until desired.
