When Estee asked me to join her cookie roundup by submitting a favorite cookie recipe, this recipe immediately came to mind. This tried and true recipe is absolutely delicious and perfect for filling a cookie jar at your next party or simcha (just don’t expect it to stay full for too long!).
- margarine - 2 sticks
- sugar - 1 cup
- oil - 2 Tbsp
- salt - 1/2 tsp
- egg yolks - 2
- cocoa powder - 6 tbsp
- vanilla extract - 2 tsp
- flour - 2 cups
- egg whites - 2
- chopped pecans - 1 3/4 cups
- bittersweet chocolate - 8 oz.
Preheat oven to 350 degrees.
Cream margarine and sugar until fluffy. Add the next 6 ingredients.
Beat egg whites with fork until frothy. Form dough into 1” balls. Dip each ball into egg whites, then into chopped pecans. Place on parchment lined cookie sheet. Make a deep indentation with your thumb in the center of each cookie. Bake 10-12 minutes.
Melt the chocolate in a double boiler or microwave. Place ½ tsp in each indentation.
