The shock of fall colors is reflected in the flowers I often choose to grace my Succos table. I love the deep reds, muted purples and of course, bold oranges. They remind me of the additions to my holiday meals, including butternut squash soufflé, carrot dill soup, and of course PUMPKIN COOKIES.
I don’t remember the first time I ate these cookies, but besides tasting good, I felt great serving them because I knew they were good for you. Pumpkins, besides being in season, are a wonderful source of Beta Carotene, vitamin A, Vitamin C and Folate. Hovering at 50 calories for a cup of cooked pumpkin, it’s also a low calorie snack.
