We call this kugel spoon apple kugel because that’s the way we serve it- with a spoon stuck into the fluffy top and everybody helps themselves. It’s delicious served both warm and at room temp.
- McIntosh Apples - 6 large, peeled, cored, and quartered
- Baking Apples (such as Gala) - 6 large, peeled, cored, and quartered (
- sugar - 1/3 cup
- apple juice - 1 tbsp
- cinnamon - 2 tbsp
- oil - 3/4 cup
- sugar - 1 1/2 cups
- eggs - 3
- vanilla extract - 2 tsp
- flour - 1 1/2 cups
- baking powder - 1 1/2 tsp
- salt - 1/4 tsp
Preheat oven to 350 F. prepare a 9 by 13 inch Pyrex baking dish, or a large round 10 inch pyrex dish Place on a baking sheet, lined with parchment pape. To protect from spillage.
Place apples through the food processor fitted with a slicing attachment creating finely sliced apples. Place in a large bowl. Toss with the sugar and apple juice. Place apples in the baking dish. They should totally cover the baking dish quite generously
In a large bowl, mix the oil and sugar by hand ; then add eggs and vanilla. Fold in flour, baking powder and salt to mix to create a very thick batter.
Sprinkle the cinnamon on top of the apples and pour the batter evenly over apples. Give the pan a few gentle shakes. Place on baking sheet and bake 60 minutes (it varies, depending on how juicy apples are) or until cake is firm and slightly browned on top. Cool slightly before serving.
Can be made ahead 2-3 days, but does not freeze well.
