- oil - for frying
- onions - 2, diced
- mushrooms - 500 grams, diced
- salt -
- pepper -
- chicken breasts - 4
- olive oil -
1. Preheat oven to 350.
2. Fry onion in a non-stick pan over medium heat. Add diced mushrooms and fry until mushrooms are dark. Sprinkle with salt and pepper. Set aside to cool.
3. Flatten chicken breasts. Spoon 2 tbsp of mushroom mixture onto each chicken breast. Roll tightly and fasten with toothpicks. Place each one seam side down in a lightly greased dish. Brush some olive oil over schnitzels.
4. Bake covered for 30-40 min or until chicken is cooked through and is no longer pink. Remove toothpicks and serve.
Note: you can serve them either as a roll or sliced.
