A delicious alternative to the fried latke. Using farmer cheese as the base, it comes out filled with flavor without being oily.
- farmer cheese - 3 cups
- eggs - 2
- egg whites - 3
- flour - 1 cup gluten free (brown rice)
- pure vanilla extract - 1/2 teaspoon
- salt - 3/4 teaspoon
- baking powder - 1/4 teaspoon
- cinnamon -
- sugar -
Preheat oven to 425 degrees. Grease a baking sheet liberally. In a medium bowl, combine cheese, eggs, egg whites, flour, vanilla, baking powder and salt. (not cinnamon sugar) I did this by hand. It is thick and heavy and I was ready to add another egg or some other liquid but no, it did not need it. I used a quarter cup measure and flattened it, on the greased baking sheet. Sprinkle with cinnamon sugar and spray with cooking oil. Bake from 8 to 10 minutes until golden. It is sweet enough with the cinnamon and sugar but the addition of jelly or syrup would work.
