Before you turn the page, thinking oily, spicy, fried, Israeli, and “not for me,” let me assure you that the recipes below are none of the above. Whether you are European (then it’s aubergines), American, Israeli, or Canadian, you’re going to want to try them both. They are really delicious (I know I always say that, but I’m honest!), and you’ve just added two new side dishes to your repertoire.
