When the earliest signs of spring begin to peak out from under the snow, we celebrate by dusting off the barbeque. You’ll find us grilling in rain, heat, day and night, as we move our cooking to our outdoor “kitchen”. My favorite dessert this year is my hawaiin pinapple dessert. I marinate fresh pineapple circles in some coconut milk, and grill it on each side for about 3 minutes. Remove and sprinkle with some coarsely grated coconut. Serve warm.
