Really easy to prepare. Delicious and creamy. Best with challah or matzah!
- medium eggplant - 1
- cloves garlic - 2
- salt - 1/5 tsp
- Mayonaise - 4 T
- sugar - dash (optional)
Wrap eggplant in silver-foil. Place directly on the stove-top, preferably a wide range one. Flip over when the eggplant seems to have softened on bottom, approximately 10 minutes.
Grill on the other side for 5-10 minutes. Remove. Let cool. Remove the peel and place in the blender cup and add rest of ingredients.
Blend until creamy. Enjoy!
