I recently spoke to a friend who gave me the secret to perfectly creamy hummus. In her words, “it’s a small tip that makes a big difference”. The trick is to remove the skins of the chick peas. Rinse the chickpeas in a colander under cold water, and then spread them out onto a towel. Rub another towel vigorously over the chickpeas, and skins will come loose. Remove all the skins and discard. Only when the skins are separated, blend them. Try it, you’ll like it!
