Shavuot is on its way, and while quiche is a favourite anywhere, anytime, it’s especially fabulous as one of the stars of any dairy meal. It’s versatile and simple at the same time. It can be both rustic and elegant, it’s impressive looking, and it’s even French. While a quiche usually doesn’t require too many ingredients, it also makes it more important to make sure that every ingredient you use is fresh and tasty. I love adding fresh chopped herbs whenever I can, and a hint of nutmeg will make all the difference in an earthy, cheesy combination. I use salmon quiche often as an appetizer, and it can be served warmed or at room temperature.
