You know what I love about cooking? It’s the versatility of it all. It never ceases to amaze me how one single ingredient can change the whole taste, aroma and outcome of a recipe. That’s what cooking is about. Knowing which ingredient will enhance another, and pairing them all correctly to produce one outstanding dish.
For those of you who were fortunate enough to attend the Chef’s Challenge fundraiser for Torah Umesorah (in Toronto), you may remember a delicious salad that Chef Mitch Lipperman created. The simple ingredients are overpowered by a fragrant punch of something citrusy. The secret is a whole lot of lemon thyme, a strain of thyme that has incredible lemon flavor.
