Can be made Pareve or Meat.
- 2 tablespoons olive oil1/4 cup minced garlic1 small onion, minced6 cups vegetable or chicken broth2 carrots cut into matchsticks1 red bell pepper, thinly sliced2 cups of fresh baby spinachsalt and pepper to taste -
In a large saucepan saute the garlic and onion in the olive oil for about 5 minutes until they are soft and starting to turn golden.Â Add the broth cover, and simmer for 10 minutes. Bring the mixture to a boil and add the carrots and red pepper. Cook for 3 minutes then add the spinach and cook for 1 minute.Â Remove from heat and season with salt and pepper to taste and serve.
