I'm surprised to see a lot of the entries have soup mix or soup consomme or bought broth. When you take a few minutes to chop fresh veggies and saute them to bring out their best there's nothing tastier!
- 1 onion diced -
- 2 carrots diced -
- 4 potatoes diced -
- Salt and pepper -
Saute onion in a little oil. Really take a few minutes to caramelize them. You'll know they are ready when your kitchen starts smelling really good. Add the carrots and then potatoes sauteing each for additional few minutes. Add water to cover, salt and pepper, and bring to a boil. Reduce heat, cover pot almost all the way, and simmer for an hour or even longer, until some hungry little people start coming home and sniffing while still in their coats asking "whats for supper it smells so good?" Perfect for after a fast, too. Don't forget to give a stir every once in a while.
