creamy low calorie soup
- 3 leeks, white part only -
- 1 large vidalia onion, chopped -
- 6 - 8 medium zucchini, peeled and sliced into chunks -
- 1 tsp salt -
- 1/4 tsp pepper -
- 2 Tablespoons chicken consomme powder -
saute the leeks and onion in 2 tsp oil for about 5 minutes until soft and slightly brown. add the chunks of zucchini and enough water to cover. Cook on medium fire for about 45 minute. use an immersion blender. Enjoy!
