Very hearty one pot meal soup. Serve with chunks of turkey removed from the wings.
- 2-3 onions sauteed until brown -
- 2 turkey wings -
- 5 stalks celery sliced -
- 5 carrots cut in half and sliced -
- plenty of salt -
- 7 oz. plastic cup of barley -
Boil the turkey in water a few minutes. remove the scum. add all ingr. in 5-6 quart pot. after 3 hours of cooking check if thick, if not continue cooking until it thickens. (Barley soups are usually thicker a day after cooking.)
