Healthy yet delicious - a family favorite! I always double this recipe. Freezes beautifully.
- 2 Tbsp canola oil -
- 1 onion, chopped -
- 1 clove garlic -
- 5 cups of water -
- 2 1/2 cups sliced carrots -
- 1/4 cup raw rice (I use brown rice) -
- 2 Tbsp chicken soup mix/consomme -
- salt to taste -
Saute onion and garlic in oil until soft. Add water, carrots, rice, and consomme. Bring to a boil and then simmer for 30 minutes or until carrots are soft. Blend in pot using immersion blender.
