My favorite part of the pizza is the crust, but the flour always drags me down. Even whole wheat. When I discovered this recipe, I was hooked!
- 1 large portobello mushroom, cleaned and dried -
- 1/4 cup shredded cheese (I like mozzarella mixed with pepper jack or cheddar) -
- 2-3 tablespoons of pizza or marinara sauce -
Spray cookie sheet with cooking spray. Put a layer of sauce on the mushroom then a layer of cheese. Bake at 375 until cheese is melted and a little toasted on top.
NOTE: Mushrooms let out a lot of water. If you simply layer cheese and sauce on it, the liquid will make your pizza mushroom very soggy. I use a sprayed grill pan to heat up mushroom until most of the water is released.
