- 4 eggs -
- 1 c oil -
- dash of salt -
- 2 tsp vanilla extract -
- 1 1/2 cup sugar -
- 6 T pineapple juice reserved from can -
- 4 tsp baking powder -
- 2 1/2 cup flour -
- 2 medium cans crushed pineapple,well drained -
- cinnamon and sugar -
Beat first six ingredients until smooth. Add dry ingredients and mix well. Pour a half of the batter into greased bundt pan. Spread drained crusheded pineapple over batter and sprinkle with cinnamon and sugar. Pour remaining batter on top of cinn and sugar. Bake at 350 for 1hour. Sprinkle with confectioners sugar when cool. Good luck!
