- 2 cups cooked rice (I used bowl in a bag brown rice) -
- 1 tsp Olive Oil -
- 1/2 tsp lime zest -
- 1 tbsp (or more) fresh lime juice -
- salt and pepper to taste -
- Optional freshly chopped parsley or cilantro
Combine cooked rice, olive oil, zest and juice together in a bowl.
Season with salt and pepper.
Adjust other flavors to your personal taste.
Enjoy with any mexican inspired meal.
