This is a very moist, yummy coffee cake that is a snap to make and looks nice straight out of a bundt with some icing sugar dusted on top, or a glaze if preferred.
- 2 2/3 cups flour -
- 3 t. baking powder -
- pinch salt -
- 2 t. vanilla (pure) -
- 4 eggs -
- 1 1/2 c. white sugar -
- 1/2 c. dark brown sugar -
- 2/3 c. orange juice -
- 1 c. oil -
- 4 eggs -
- 1/2 c. brown sugar -
- 3T. flour -
- 1 1/2 T. oil -
- 2t. cinnamon -
- approx. 1 c. choc. chips (optional) (I prefer using minis, but regular are fine too) -
Mix eggs and sugars in mixmaster till very thick . In the meantime sift the dry ingredients.
Combine the filling ingredients ,( except the chocolate chips if using) in a small bowl using a fork till combined. Mix the oil and orange juice together in a measuring cup. When eggs are thick, add vanilla. Then alternate the dry ingredients, with the wet till mixed thoroughly. Don' t overbeat.
Spray a bundt pan thoroughly with Pam. Pour 1/3 batter into pan, sprinkle with 1/2 filling (try to avoid sides of pan) If using choc. chips spread on top ( I don't really measure). Then pour another 1/3, and rest of filling and chips, then last 1/3 of batter.
Bake at 350 for 55 minutes. Don't overbake. Let cool for 20 minutes, run knife along sides and middle and invert.
You can either dust with icing sugar or use your favorite glaze.
