A wonderfully Delicious dessert that has no flour, sugar, eggs or dairy. Requiring absolutely no backing, it's probably the best dessert ever. Not to mention that you'll have to hide some extra pies around the house because after someone tastes it, there wont be any left!!!
- Crumble Crust/Topping -
- 2 cups raw walnuts or pecans (or mixture) -
- 1/2 cup unsweetened dried coconut -
- 1/2 teaspoon cinnamon -
- 1/4 tsp table salt -
- 1 cup raisins -
- 3-4 medjool dates -
- Apple pie filling -
- 2 apples, peeled and sliced thinly -
- 2 tblsp. fresh lemon juice -
- 2 apples, peeled and quartered -
- 3/4 cup raisins soaked in warm water for 20 minutes -
- 3 pitted medjool dates soaked in warm water for 20 minutes -
- 1/2 tsp cinnamon -
Process the first 5 ingredients with S-blade food processor until coarsely ground. Add raisins and dates until mixture begins to stick together, but is still coarse. This will keep for at least 1 month refrigerated and is a nice quick dessert to go in and grab when your sweet tooth hits. It also makes a great crust for puddings and pies.
Apple pie filling
Sidenote- soaking the raisins and dates makes them more pliable and sticky. Something you want for the recipe to work well.
Coat sliced apples with 2 tablespoons lemon juice to retain color and set aside. Place remaining ingredients and 1 tablespoon lemon juice in food processor. Process with S-blade until smooth. Remove from processor and combine this mixture with the sliced apples. To make apple pie- firmly press 1 cup crumble topping into 8" or 9" pie pan. Spread pie filling over crust, then sprinkle on 1/2-1 cup of remaining crumble topping over the top.
This could also be referred to as an apple cobbler, in which case you could just spoon it out for serving, or you can cut it into standard pie pieces for serving as a pie. Some of the rawist friends I have tell me that this pie actually is completely gone at holiday gatherings, while the cooked pies have left overs. It doesn't surprise me a bit, and I'm sure you'll see why once you sink your teeth into this one!
