My favorite version of a delicious kani salad. Easy and fun enough to make that you can get your kids to do it for you.
- 1 pack frozen kani, defrosted -
- 2 sticks celery -
- 1 large red bell pepper -
- 2 hard boiled eggs -
- 1/2 cup light mayo -
- Freshly squeezed lemon or lemon juice -
- Salt to taste -
- Cooked sushi rice (optional) -
Shred kani by hand by peeling apart the sticks (this is the part i get my kids to do) Or you can just cube it then dice the rest of the vegetables, add egg whites diced. Dress the salad with mayo then add some lemon and salt to taste. Serve over some sushi rice to instantly turn it into a sushi salad, drizzle spicey mayo on top.
