Quick and easy apple pie. I got the recipe from my mother. I can do it in my sleep! I usually just eye-ball the ingredients (it doesn't have to be exact) but I am including measured amounts, though they are estimated. Great for the fall or any time. Topped with vanilla ice cream makes it even better!
- 8 - 10 Macintosh apples -
- 2 tsp Cinnamon -
- 3/4 cup Brown Sugar -
- A pinch of nutmeg -
- 1/4 cup cranberry or orange juice -
- 2 tbs flour -
- 2 prepared pie crust -
Peel and slice apples into a large bowl. Sprinkle the apple with the remaining ingredients and mix well. (There should only be a little bit of juice remaining. If its too watery add a little more flour. It should be more pasty than watery.) Pour into prepared pie shell and cover with the second. Cut 4 slits in the top crust to vent. (Tip: Put pie onto a lined cookie sheet to catch any drips.) Bake at 350 for 45 min - 1 hour. Enjoy!
