- 3/4 cup oil -
- 1 cup sugar -
- 2 eggs -
- 1 tsp. vanilla extract -
- 2 1/2 cup flour -
- 2 tsps. baking powder -
- 1 cup chocolate chips -
- 1/2 cup sugar mixed with 1 tsp. cinnamon for dusting -
Preheat oven to 350 F. Line a large rimmed cookie sheet with parchemnt paper. In a large bowl, beat oil and sugar and eggs til light and fluffy, approximately 2 minutes. Add vanilla, flour, baking powder until just combined. Fold in chocolate chips.
Spread dough in two loaves on parchment lined cookie sheet. Sprinkle liberally with cinnamon sugar mixture.
Bake at 350 F for 25 minutes. Remove from oven and slice into 1/2 inch wide strips.
Lower oven temperature to 250 F. Bake for an additional 10 minutes. Let cool and enjoy!
