It has been a hectic week and we're just getting over the leftovers. I think this week is going to be a simple one. I'll leave the cooking to a minimum and really bask in the glory of my Shabbat rest- in fact, starting it by Friday afternoon this time. I will go to my tried and true comfort food like
- 5 lbs Yukon Gold potatoes -
- 7 eggs -
- 3/4 cup oil -
- 1 heaping tbsp salt -
- 1 cup boiling water -
1. Grate the potatoes. (I usually keep them half blended and half stringy).
2. Combine all the ingredients and pour into a greased 9x13 pan.
3. Bake 390 for two hours and then cover and keep on low until served.
Note: For a crispy kugel, don’t cover the kugel and bake for an additional hour at 350.
