- 8 pieces English cut ribs -
- 1 tsp crushed garlic -
- ½ bunch thyme, chopped finely -
- ½ bottle dry red wine + equal amount of water -
- 2 large carrots -
- 1 onion -
- 3 celery ribs -
- 6 bay leaves -
- 1 bunch thyme -
Combine the garlic, ½ bunch thyme, wine and water in a large bowl. Add the meat and marinate for a few hours or overnight.
Wrap the last 5 ingredients together into a foil packet. Bake in oven at the same time as the meat.
Preheat the oven to 400F. Place the meat in a covered roasting pan. Bake it for 3½ hours, checking after two hours to make sure the meat has not dried out. Add more water if necessary.
Serve with Mashed Potatoes and Sauteed Green Beans.
