Veggies are not my most favorite food. I’ll admit, I rather snack on cookies than carrot sticks any day. When it comes to my children, the challenge of getting them to eat any vegetables is even greater. Sound familiar? I have noticed though, that if served a salad that is both pleasing to the eye and the palate, it will inevitably get eaten even by the most finicky members of my family. Here are some great salad ideas that can even be a whole meal in themselves, and you’ll forget that you are eating something healthy at all!
