These versatile dishes are great for a crowd, a sure fire kid pleaser and a runaway winner at a casual get together or party. They feed about 8 people generously but can also do double duty as rustic leftovers. The very versatility of a lasagna makes them naturally attractive. You can layer meat with tomato sauce and noodles, or vegetables of any kind with a silken smooth béchamel and ooey gooey melted mozzarella. Caramelized onions can replace some of the béchamel and complements pureed squash particularly well.
