- 2 large pears, peeled, cored, and halved -
- 1/2 cup shredded coconut -
- 2 tbsp dry sweetener or maple syrup -
- 1 tsp cinnamon -
- 1.2 tsp ground ginger -
In a baking dish, place pears cut side up. In a small bowl, combine coconut, sweetener, and spices. Place 2 Tbsp coconut in each pear half. Bake at 350 for 30 minutes or until tender.
