Rice is an extremely healthy food for a number of reasons. It is a complex carbohydrate, which means that it contains starch and fiber. Complex carbs are digested slowly, allowing the body to utilize the energy released over a longer period. It
- 2 cups rice (of your choice) -
- 4 cups water -
- 4 Tbsp oil -
- 2-3 carrots, grated -
- 1 zucchini (preferably with dark green peel for color), grated, optional -
- 1 tsp salt, or to taste -
Boil the water and oil together. Add the rice, veggies, and salt. Mix well. Cover the pot and cook for 15–20 minutes. Turn off the fl ame, cover the pot with a damp towel, and leave for 10 minutes. No peeking! While still hot, press the rice into muffin tins (without paper) and leave for a few minutes. Gently turn over the muffi n tin and the rice form will slide out. Garnish with an herb leaf, cashew halves, or chopped nuts in the middle.
Variation: Add tiny pieces of red and yellow pepper, or corn for more color.
TIP: To serve on Shabbos or Yom Tov, you can prepare the rice forms and put them in a foil pan with a little bit of boiling water on the bottom. Cover them tightly with foil. Put the pan on the blech or platta. They will not dry out this way. Garnish right before serving.
