This is a really easy salad that can be thrown together in a flash. I also use this recipe for the Persian Yehi Ratzons on Rosh Hashana.
- 2 14.5-oz cans sliced beets, drained -
- 1 bunch scallions, finely sliced -
- 1/2 cup fresh cilantro, chopped -
- 1 tsp salt -
- 1/2 tsp pepper -
- 1 tsp cumin -
- 1 Tbsp olive oil -
- 1 tsp sugar (optional) -
1. Combine all of the ingredients and toss well.
