Persimmons are especially popular in Israel where they are known as Sharon fruit. They are very popular throughout the Middle East and some varieties have recently become readily available in the Western hemisphere as well. They have a smooth, creamy texture and a refreshing taste and are fantastic in this healthy drink combination.
- 2 overripe persimmons -
- 1 cup vanilla yogurt (low-fat) -
- Juice of half an orange -
- ½ cup ice cubes -
1. Cut each persimmon into quarters and squeeze out the center (removing the pits) by holding onto the persimmon and squeezing gently.
2. Combine all ingredients in a blender and pulse until smooth and creamy. Serve cold.
NOTE: When persimmons are ripe, they have a red-orange skin and flesh. You can store them in the refrigerator for 3 or 4 days. Persimmons that are not quite ripe enough can be ripened at room temperature. If eaten even when slightly under-ripe, persimmons will make your mouth pucker up!
