Here is a classic favorite that is still delicious every time. It takes only minutes to prepare and is a great healthy alternative to breaded fish.
- 1 cup flour -
- ½ tsp salt -
- ½ tsp black pepper -
- Juice of 1 lemon -
- 4 fillets of sole -
- 2 to 3 Tbsp butter or margarine -
- ½ cup sliced almonds -
1. Combine flour, salt, and pepper on a plate. Place lemon juice in a bowl. Rinse fish and pat dry. Dip each piece into the lemon juice and then into the flour mixture, coating evenly.
2. Melt butter in a heavy skillet over low heat.
3. Spread almonds evenly in the skillet and cook for about 2 minutes. Then place pieces of sole onto the almonds and cook for approximately 3 to 4 minutes over a medium flame (make sure flame is not too high, or almonds will burn). Flip fillets over and cook for another 3 minutes on the second side. Remove from heat. Scrape extra almonds off the bottom of the pan and serve with the fish.
NOTE: Margarine can be substituted for the butter to keep this dish pareve.
