In order to feel like a real Chinese chef, you
- 1 lb. okra -
- 1-2 Tbsp oil -
- 1-2 Tbsp fresh ginger root, cut into very thin strips -
- 1 pint cherry tomatoes -
- 1 pint yellow mini tomatoes -
- Kosher salt -
1 In a pot of boiling water, cook the okra for about 3 minutes. Remove and drain immediately, rinsing with cold water to fully stop the cooking.
2 Meanwhile, heat oil in a wok on medium-high heat. Add ginger and sauté for 1 minute. Add tomatoes and cook just until tomato skins start to crack. Remove from heat and season with salt.
3 Add the okra to the tomatoes and toss gently. Serve warm or at room temperature.
NOTE: The outside peel of fresh ginger must be scraped off before using.
TIPS: Use a spoon instead of a knife to remove the outside layer of the ginger — it’s easier, and you are less likely to cut yourself.
Most Chinese fruit markets and major supermarkets stock okra regularly. You can ask them to get it for you if they don’t have it in stock.
