Double or triple as many times as you need.
- 4 hard-boiled eggs -
- 1 heaping Tbsp low-fat mayonnaise -
- 1 tsp gourmet (not sweet) relish -
- ½ t sp grainy mustard (I like to use one with heat) -
- 1 red radish -
- ½ tsp freshly ground black pepper -
- salt to taste -
1. Mash eggs with the back of a fork or a potato masher. Place in a mixing bowl or container.
2. Peel the radish with a peeler to create thin slices and add to eggs.
3. Add remaining ingredients and mix well.
