Whenever Yom Tov comes around, this great recipe comes to mind. We enjoy it so much that I had to share it with you. It calls for corned beef, but any pickled meat would be fine. It combines a wonderful blend of flavors with a very appealing presentation.
- 3 lbs. corned beef -
- ½ cup mustard -
- 2⁄3 cup brown sugar -
- 2 tsp honey -
- 11-oz. can whole mandarin orange pieces (with juice) -
1. Place corned beef in large pot with water to cover. Cook for three hours or until tender. Remove from water and cool. Once cooled, slice thinly and place in a lightly greased oblong baking dish or foil pan. (Discard excess fat from meat.)
2. Combine sauce ingredients in a bowl and mix well.
3. Pour sauce over corned beef. Cover pan tightly and bake at 350° F for 30 minutes.
